Follow my vegan plate as I take you from breakfast to dinner, sharing what I eat in a day!
Hi there! Seeing as I simply can’t get enough of stalking what people eat in a day, I thought I’d once again take you through a day on my vegan plate.
It’s been a bit of hectic and crappy week. If you follow me on SnapChat or Twitter, you’ll have seen me whining about the rubbish case of bronchitis I have going on. As such, I’ve had A LOT (and I mean, a lot) of Popsicles, juice, hot tea and lemon water. I’ve spent my week basically ingesting loads of fluids in hopes of flushing this nasty bronchitis away, but unfortunately it persists.
After a few (very boring) days off, I dragged myself to the office and that’s where my food journey begins!
What I Eat in a Day, Vegan Edition (Part 2)
Breakfast: Coconut Yogurt with Mixed Berries
Pile on those anti-oxidants! I’m so into the mixed berry bowls at my local market. They’re great for a snack, mixed with cereal, served atop pancakes…or in this case, with yogurt. Yes, that is a vegan yogurt and it is ever so delicious! I’m a big fan of both soy and coconut milk yogurt. Quick and easy for breakfast and also makes for a great snack. Mmm. Mmm!
Lunch: Portabella Mushroom and Avocado Wrap from The Loving Hut
I’m so fortunate to have this nice vegan cafe near me. It’s called The Loving Hut and is a national all-vegan chain. There’s one location in Cincinnati and it just so happens to be right down the street from where I work. I’m on a mission to work my way through their entire delicious menu and for lunch I selected their special…a portabella mushroom wrap. It was jam packed with mushrooms, avocado, cucumbers, crisp romaine, vegan cheese and brown rice….all wrapped together in a tasty wheat tortilla. Usually I get my lunch to go but since it was my first day back to work, I decided to take it easy and eat by their indoor waterfall and read some more of DVF’s memoir. (Review to come soon!)

Dinner: Spiced Lentil and Vegetable Soup
I have a Pinterest board filled with delicious soup recipes, that I hardly ever look at. With my throat killing me, I set out to pick one of the pinned recipes and give it a try. The one I chose is this Spiced Lentil Vegetable Soup, that has curry and cumin in it that I hoped would help clear my sinuses. It’s a very simple and tasty vegetable soup to make, with carrots, tomatoes, onion, lentils and Swiss chard. You essentially throw everything into a pot with some seasoning and let simmer away for a half-hour. 30 minutes later, I was left with this DELICIOUS vegetable soup that was not just tasty…but also very soothing to my raw and achy throat. Of course, to top it off I had some fresh French bread. Obviously. The soup was so good I had seconds.)

Snack: Lemon and Ginger Hot Tea
The season 4 finale of Bates Motel was so good that it inspired me to go back and rewatch some of the previous seasons. To further ‘soothe’ my aching throat and chest, I made a piping hot cup of my favorite Lemon and Ginger tea to watch some of season one with the latest Harper’s Bazaar. Both lemon and ginger are said to be natural remedies for bronchitis, although I honestly haven’t noticed any lasting difference. (Sadly.) Usually I like to have some dark chocolate or chips in the evening, but with my throat so sore…I elected for two big cups of tea instead. Sick people problems!
That’s a wrap on my latest what I ate in a day. I love these kinds of posts! and whilst I’m not vegan I’d love to include some more vegan meals into my diet – your soup looks delish, with a nice hunk of bread to mop it up!
