With the holiday season upon us, there’s no better time to indulge in this new must-have vegan molasses cookie recipe!
Season’s Greetings to you!! I hope you and all of your loved ones are having a warm and safe holiday season. As the year winds down and work schedules ease, it’s high time we start kicking up our feet and indulging in festive treats!
For today’s recipe, I first have to give full credit to Full House and Hallmark Channel movie star Candace Cameron Bure for the original recipe. I recently picked up the Hallmark Channel’s Countdown to Christmas coffee table book from Amazon and tucked inside are a variety of delicious holiday recipes from the network’s most beloved stars. As a self-confessed fan of cheesy Hallmark movies, I picked this up as a token for celebrating the most wonderful time of the year and have enjoyed flipping my through it this December.
Of all the recipes included in the book, the one I knew I immediately had to make for my own family was Candace Cameron Bure’s signature Chewy Ginger Cookies. For one, the recipe includes molasses which I definitely have a weakness for around the holidays. Add to that some spices and I knew it would make for the perfect holiday treat that was rich with flavor!
Chewy Vegan Molasses Cookie Recipe
If you follow a plant-based diet like me, fear not! Candace Cameron Bure’s recipe adapts quite easily! All I had to do was swap out the eggs and I was in business!!
Additionally, there were a couple quick tweaks I made to the recipe. I added in some nutmeg as it’s one of my favorite flavors for the holidays. With that add-on, I also scaled back the ginger as not to completely overwhelm the palette.
With those quick fixes, my modified chewy Vegan Molasses Cookie Recipe was well on its way! The recipe’s prep comes together in a quick ten minutes and the aroma of these baking in the oven felt like the true spirit of the holidays had officially arrived. Chewy Vegan Molasses Cookie Recipe
Bake Time: 10 minutes Total Cook Time: 30 Minutes Yields: 3-4 Dozen Cookies
INGREDIENTS:
- 1 1/2 cups vegetable oil
- 3 cups sugar (2 for baking, 1 for rolling balls of dough)
- 2 flax seed eggs (5 tablespoons of water + 2 tablespoons of ground flax seed)
- 3/4 cup molasses
- 4 cups sifted all-purpose flour
- 4 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp ground cloves
- 1 tsp salt
DIRECTIONS:
- Preheat your oven to 350°F.
- In a large bowl, blend together the vegetable oil, 2 cups of sugar, flax seed eggs and molasses.
- Sift in your dry ingredients, including flour, baking soda, salt and spices. Thoroughly mix ingredients together to form a soft dough.
- Line baking sheet with parchment paper.
- Roll cookie dough into 1-inch diameter balls then roll onto raw sugar to coat them for baking.
- For a super soft and chewy cookie, bake in the oven for 10 minutes. Cookies should rise nicely but remain soft for a chewy finish.
- Allow your cookies to cool and then — enjoy!!
