From my Pinterest Boards: I whipped up Tasty Kitchen’s delicious, Crunchy Thai Cashew and Quinoa Salad, with ginger peanut dressing!
New ‘series’ alert, I’m going to start sharing recipes from my Pinterest boards. Pinterest is 100% the modern equivalent to a cookbook in my world, as in- I not only find recipes on Pinterest, but that’s where I store them as well. It’s so easy to whip out your iPhone while grocery shopping, pulling up the ingredients you’ll need for your latest Pinterest masterpiece! Modern convenience people, it’s amazing!
First recipe I decided to whip up and share with you, Tasty Kitchen’s super delicious Thai Cashew and Quinoa Salad. Of course, it’s vegetarian (like all recipes you’ll find at Dream in Lace) and insanely delicious!
I took their original recipe, and doubled it. Why? Because I hate when recipes ask for amounts of things that will leave you with a whole lot of leftovers of random ingredients. That stresses me out! Like, whoa what am I supposed to do with all this leftover cabbage? #FirstWorldProblems So yes, I doubled up because I wanted to make better use of all my produce, as well as plan ahead to have this through the week. Cooking after a long day of work is a bit of a chore, so I like to have meals like this on-hand so on the days when I’m too tired, I’ll have something nutritious and delicious all ready to get in my tummy!
As expected, this Thai Quinoa and Cashew salad is full of flavor and crunch! It’s also pretty darn hot and humid outdoors, as it is July, so this is a lovely refreshing meal to enjoy to cool off a bit. Yes, I am a vegetarian so I’m used to meals without meat – but I do think this is a balanced meal that’s quite filling on it’s own. The vegetables will give you lots of nutrients, and the quinoa and peanut butter will load you up with healthy protein!

Whaaaa this looks yummy and completely doable! I discovered quinoa like 6 months ago and liked it but had no idea how to cook it or even where to find it. But I’ve seen it pop up now at Target and even my local bodega so I gotta try this out!

Yes, you’ve got to try this. I think it gets even better after day one, since the flavors really get absorbed by the quinoa. It’s delish! xo
