Oops, it’s Labor Day weekend and you need a last minute easy recipe for your cookout? Look no further! My super easy, Lemon and Cilantro Salad recipe is a really quick way to build a fan club. Yup, it’s a crowd pleaser that’s sure to earn you a few more friends on Facebook (and otherwise).
If you have 10-15 minutes, you have enough time to make this Lemon and Cilantro Salad. I concocted this recipe on my own recently to make use of the fresh cilantro I had hanging out in the fridge, and it turned out to be one of my favorite recipes this summer. It’s a great way to make use of all the flavorful produce this time of year brings, and keep things on the light side so you won’t kill your diet.
If you do, in fact, make this for your Labor Day picnic – you can safely indulge in this and save your calories for other tasty treats like potato chips and cupcakes!
Here’s what you’ll need:
1 Cucumber
1 Red Bell Pepper
1 Yellow Bell Peper
1 Red/Purple Onion
2-3 Ripe Tomatoes
1 Large or 2 Medium Lemons
2-3 Tablespoons of Olive Oil
1/2 a Bundle of Fresh Cilantro
Salt and Pepper to Taste
Crumbled Goat Cheese (Optional)
Directions
- Get out your cutting board, and get cutting! Finely dice and slice all of your vegetables and place in a large bowl.
- Dice/mince your cilantro and add that to your vegetable mixture.
- Squeeze in the juice of your lemon and add 2-3 tablespoons of olive oil.
- Stir together and add salt/pepper to taste.
- Serve with crumbled goat cheese on top, and voila! You’re done!
I recommend whipping this Lemon and Cilantro Salad up on a Sunday, to have on hand for quick and easy meals through the week. This works well packed as lunch at work (or school), or as a quick dinner when you return home. I am ALL about preparing meals ahead of time because on weekdays, I just can’t be bothered to slave or a stove or cutting board after a long day of work.
And, because of all the fresh ingredients – there’s something very soothing and refreshing about this salad. The cucumber, cilantro and lemon also combine well to give a nice boost to your taste buds.
It’s a bit sad to see summer coming to an end, but I see no reason why that should hold you back from preparing Lemon and Cilantro Salad throughout the year. In fact, I think this will help a lot with my Winter Blues this winter. When it’s gray, snowing and bitter cold – what better way to give myself a little kick than to whip up a summery salad?
